Black rice is a type of rice belonging to the Oryza sativa species.
It is also called forbidden or purple rice because in ancient China, black rice is said to be considered so special and nutritious that its consumption was forbidden to all but the royal family.
Black rice gets its characteristic black-purple color from a pigment called anthocyanin, which has strong antioxidant properties.
Today, thanks to its mild, nutty flavor, chewy texture, and many nutritional benefits, black rice is found in many cuisines around the world.
Although not as common as other types of rice, black rice has the highest antioxidant activity and contains more protein than brown rice.

To prevent the rice from becoming rubbery during cooking, we recommend rinsing it under cold water before cooking to remove excess starch from the surface. Combine the rice and water or stock in a saucepan over medium heat. For every cup (180 grams) of raw black rice, use 300 ml of water or stock. Once boiling, cover and reduce heat to low. Cook the rice for 30-35 minutes, or until the rice is tender, chewy and has absorbed all the liquid. Remove the pan from the heat and let the rice sit for 5 minutes before removing the lid. Before serving, loosen the rice with a fork.
