Coconut milk powder is made by spray-drying coconut milk, not from dried and ground coconut meat.
Due to its high fat content, coconut milk powder is a good substitute for full-fat milk powder. It is highly recommended for soups, sauces and curries, however, due to its higher fat content than whole milk powder, cakes made with coconut milk powder are much more filling.
Coconut milk is naturally vegan and dairy- and lactose-free. Coconut milk can be replaced with coconut milk powder in a 1:1 ratio.
